Lemonybarramundi Tangy and lemony Lowfat

Ingredients

  • Onion powder-1 teaspoon
  • Garlic powder -1 teaspoon
  • Cumin powder-half a teaspoon
  • Garlicinfusedoliveoil -1.5 teaspoon
  • Red chilly powder -half a teaspoon
  • Oregano-1 teaspoon
  • crackedpepper
  • seasalt
  • Fresh basil – finely chopped just for garnish and marination
  • 2 pods finely sliced fresh garlic
  • lemon juice of 1 lemon
  • lemon rind grated .

Step 1:

Grate the lemon rind of a lemon and apply on fresh barramundi. Cut the lemon and squeeze the lemon juice of a full lemon.

Step 2 : Apply a tea spoon of garlic infused olive oil, some cracked pepper and sea salt as per taste, half a tea spoon of red chilly powder , half a tea spoon of cumin powder , a tea spoon onion powder and garlic powder a tea spoon of oregano .

Step 3 : Chop 2 large pods of fresh garlic and chop a small bunch of fresh aromatic basil. This gives the dish an extra punch and aromatic classic italian flavour when finally cooked.

Step 4 : Marinate the barramundi for minimum 30 minutes to an hour to infuse the flavours into the fish and then pan fry them in a teaspoon of garlic infused olive oil and flip on either side for 5-7 minutes until cooked through as in the images below .

Step 5: Next on medium heat pan fry the barra in a tea spoon of garlic infused olive oil as in the image below

Step 6 Fry in a teaspoon of garlic infused olive oil for 2-3 minutes on either side on medium heat. Gently flip over and fry 2-3 minutes more until cooked through. (p.s. You can grill it too, I ran out of aliminium foil so the next time I will come up with another delicious barra grilled recipe , do follow me )

Gently flip over as in the image above

Serve hot topped with extra squeez of lemon juice and top with some fresh rocket and a dash of grated parmesan , enjoyyy your succulent, delicious and tangy Barra , bon appetite , cheers i
