Grainfree Zuchinnifritters

Ingredients

  • Zuchinni -1.5 large ones
  • Grated Parmesan
  • Extra virgin olive oil
  • 2 egg whites
  • Almond meal -half a cup
  • Cooked quinoa-2.5 tablespoon
  • Garlic powder
  • Cumin powder
  • Oregano
  • Crackedpepper
  • Sea salt
  • Red chilli powder- half a teaspoon
  • Turmeric- half a teaspoon
  • Cumin seeds -1.5 teaspoon
  • Extra virgin olive oil-1 tablespoon

Step 1 : Grate 1.5 zuchinni and squeeze out all the juice as in the image . (You can use a clean Muslin cloth or a strainer to squeeze it out )

Step 2 :Cook the quinoa as per packet instructions and strain under cold running water . Take out 2.5 tablespoon and squeeze out any excess water and keep aside . p.s. You can also use 2.5 table spoon of quinoa flour as an option .

Step 3: In a deep bowl add 2 egg whites, half a cup of almond meal and 2.5 tablespoon of the cooked quinoa. Add a teaspoon of extra virgin olive oil, garlic powder, cumin powder (half a teaspoon), cumin seeds (half a teaspoon), red chilli powder, turmeric powder , grated Parmesan (1.5 tablespoon) , crackedpepper and sea salt. Mix well to form a mixture.

Add 2 egg whites (so we are keeping it low fat ) with half a cup of almond meal.
Add grated Parmesan, herbs and the spices and mentioned below .
Add your spices and mix well
Add the cooked quinoa and mix well . You can also add quinoa flour in its place .
The mixture should look thick and not watery and thin .

Step 4: Heat your frying pan on low heat and add a teaspoon and a half of extra virgin olive oil , when it gets hot add a tablespoon of the mixture as in the pic and cook for 2-3 minutes, gently flip on the otherside like a pancake and cook through for another 1-2 minutes . Press with spatula to ensure it’s cooked through.

Spread it on a non stick pan in even sizes .
Cook for 2-3 minutes flipping on either side until it’s cooked through and the mixture thickens.

Serve hot with cold lite Greek yoghurt dressing infused with garlic powder, crackedpepper, pinch of salt salt , dried parsley leaves , extra virgin olive oil, and topped with toasted sesame. Bon appetite, enjoyyy.https://videopress.com/embed/Osi67uMl?preloadContent=metadata&hd=1
