Cookiebrownie quinoaoatmealcookies


  1. Traditional oats -1 cup
  2. Flaxseed meal -2 teaspoon
  3. Organic cocoa powder-2 tablespoon
  4. Almond butter-2.5 tablespoon
  5. Vanilla-1 tablespoon
  6. Maple -half a cup
  7. Cinnamon- half a teaspoon
  8. Sea salt- a pinch
  9. Xanthan gum -1 heaped teaspoon
  10. . Finely chopped dark chocolate 85% Lindt
  11. . Baking powder-1 teaspoon

Step 1 :

Grind the oats to an oat flour- Take one measure cup oats and grind to a fine flour in a mixer .

Step 2 :

Make flaxeggs: Add 2 teaspoon of flaxseedmeal to quarter cup of water and wait for 5 minutes till it thickens and becomes a paste .

Step 3 :

In a deep bowl add 1 cup of the powdered oat flour, half a cup of quinoa flour, one egg , the flaxeggs mixture, one tablespoon vanilla, one and a half tablespoon overnight soaked chia seeds , half a teaspoon of cinnamon , 2 tablespoon of olive oil , a teaspoon of baking powder and 3.5 small squares of melted dark chocolate over a double broiler and slightly knead into a lump free batter.

Step 4

On stove top melt in a non stick pot on low heat 2.5 tablespoon of almond butter in 2 tablespoon of olive oil and keep stirring ( if you want it more dense melt xtra virgin coconut oil but remember that’s high in saturated fats) into a smooth pourable lumpfree liquid.

Pour into the mixture , next melt 3.5 squares of dark chocolate on a double broiler if you dont have that (in a deep pan add some boiling water and on top of that add a smaller glass bowl with the chocoloate )as in the pic :

Mix it all together and line a baking tray with baking paper. Next with a cookie scooper scoop out even sized cookie dough (which should be stick and gooeyas in the images below ) . Top with finely chopped dark chocolate as in the image below .Pre heat the oven at 180 degrees C for 10 minutes and bake for 12 minutes.

Let it rest for a minute or two in the oven . Then cool on wire racks till it firms up and has a crunchy and firm exterior and gooey brownie interior , enjoyyy your nutritious , delicious and healthy cookie brownie, bon appetite.
