Chia pudding with probiotic yoghurt and peach compote

When my daughter gets back from school she invariably likes something cold . This is a recipe when is not only a superfood but super nutritious as well , perfect for growing teens / kids and adults likewise as it’s loaded with antioxidants, iron rich , alkaline in pH and rich in magnesium, phosphorus and calcium great for bone health . The probiotic yoghurt is great for gut health and contains good bacteria which promotes healthy digestion and helps relieves acid reflux. Chia seeds help reduce inflammation which is the cause of major lifestyle diseases today therefore gut health is very critical for inner wellness.

Ingredients:

  1. Chia seeds – 4 tablespoon
  2. Vanilla – 1 tablespoon
  3. Probiotic yoghurt -half a cup Or 125 grams
  4. Peaches or fruits of your choice – 1 large peach
  5. Desiccated Coconut – half a teaspoon
  6. 100% pure organic Maple -1 teaspoon

Step 1 :

Soak 4 tablespoon of chia seeds in 1 cup of boiling water (that helps make the seeds expand quickly) for min 1 hour.

After a hour the mixture should resemble the video above thick and jelly like .

Step 2 :

Next pour into a glass jar and top with 5-6 tablespoon of probiotic yoghurt (you can use dairy free coconut/ almond etc ) and finally top with toasted oats as in the pic .

I used some leftover which I had made a while ago . ( Else just lightly toast some rolled or traditional oats in a non stick pan on medium heat until the colour changes and you get a nutty aroma . Remove immediately from heat so it does not burn )

Step 3 :

Make the peach compote: Chop half the peach into small bits and keep aside . Slice the balance half and keep aside for the topping.

In a non stick pan add half the chopped peaches , water and reduce till it becomes clumpy and breaks down completely. (I absentmindedly do stuff and completely forgot to take a pic.  )

Finally top it with the peach compote, desiccated coconut and a dash of maple and dig in . Enjoy your delicious and fresh peaches and cream, bon appetite .Have a wonderful day everyone .
