Aloogobi Caulicflower and lowcarb Spudlightpotatoes

#aloogobi #cauliflower and #lowcarb #spudlightpotatoes – How do you guys cook your cauliflower ? .

I cook it in a number of ways like a cauliflower bake with low fat cheddar which is absolutely delicious and lipsmacking . I simply roast or grill them with spices and herbs and extra virgin olive oil and that’s another way and this is another recipe, an Indian style dish , made the way my mom used to cook it . When it’s combined with potatoes and cooked in #indianspices like cumin , #freshginger #fenugreek leaves etc etc (I added my own touch to it like I normally do ) and it takes it to another level . I have topped it with a dash of #chaatmasala and #freshcilantro . I have used 25% less carbs spudlightpotatoes from #coles to make it .

Perfect and spicy ? for a #coldday (14 degree C) in Sydney today and it was around 3 degrees in the morning!!!

I must add more than half a cup of cauliflower is high food map so please don’t overeat for all my #Gerd followers as it can be difficult to digest in large quantities. The potatoes however balance them out perfectly making it a #delicious #comfortfood . I’m finally getting my opportunity to eat potatoes after loosing 10 kgs or 22 pounds and I’m making the most of it!!!! ?Need the recipe, let me know . Ingredients

  • Cauliflower-half a large cauliflower
  • Spud light potatoes- 3 large
  • Fenugreek leaves
  • Red onion-1
  • Fresh ginger
  • Cumin seeds
  • Fenugreek seeds
  • Mustard seeds
  • Green chilli-1
  • Asafoetida-1 teaspoon
  • Red chilli powder- half a teaspoon
  • Turmeric powder-1 teaspoon
  • Coriander powder- 1 teaspoon
  • Cumin powder- 1 teaspoon
  • Lemon juice- half a lemon
  • Fresh cilantro
  • Vegetable stock (optional)
  • Chaat masala (optional)

Step 1: Finely chop one bulb of fresh ginger. (For those who eat garlic also chop 3 large pods of garlic) and keep aside . Chop 1 large red onion and keep aside .

Step 2: Wash and Cut half the cauliflower and chop into small portions and keep aside . Cut 3 large spud light potatoes into small cubes and keep aside

Step 3:In a deep large pan add a tablespoon of cooking oil , add one green chilli (whole ) and the chopped ginger and garlic (if u eat garlic) sautés on medium heat till the colour changes. Lower the heat . Next add the chopped red onion and sauté till they change colour and turn brown (for 10 minutes) , add a tablespoon of cumin seeds, fenugreek seeds, half a teaspoon of red chilli powder, turmeric powder, coriander powder , a teaspoon of asafoetida (very critical for helping #digestion in all who suffer from #digestiveissues as cauliflower in large amounts is high food map and difficult to digest without asafoetida) and cumin powder , a teaspoon of fenugreek leaves and mix well . Add half a tablespoon of oil to this mixture or (add a tablespoon of vegetable stock or water in its place )

Step 4: Next add the chopped spud light potatoes and cauliflower and mix well to let the spices coat the veggies completely

Step 5: Cover with a lid and let it cook on slow heat for 25-30 minutes stirring midway , add a bit of water or oil as you’d prefer to prevent it sticking in the pan , Check the potatoes midway and adjust your seasoning along with a bit more stock or oil with either more of less spices .

Step 6: Once the potatoes are tender and cauliflower cooked through squeeze half a lemon juice discarding the seeds and mix well . Top with fresh cilantro and serve hot with either flatbread or brown rice, perfect comfort food on a cold day , dig in and enjoy, bon appetite.
