Ingredients:
- Yellow Mung daal -1 cup or 250 grams
- Fenugreek seeds -1 teaspoon
- Dried fenugreek leaves – 1.5 tablespoon
- Fresh garlic 6-7 large pods
- Fresh ginger -1 teaspoon (crushed )
- Asafoetida or Hing – half a teaspoon
- Red onions- half a large onion (optional can be avoided for lack of time )
- Cumin – 1 teaspoon
- Mustard seed-1 teaspoon
- Kashmiri chillies-2 large
- Fennel seeds – 1 teaspoon (optional )
- Curry leaves- 1 large stem
- Fresh cilantro- 1 bunch
- Turmeric:1 teaspoon
- Red chilly powder-1 tea spoon
Step 1
Throughly wash one cup measure or 250 grams of the yellow lentil and pressure cook using 2 cup water and close the lid and cook on medium heat giving 4 whistles and (follow cooker instructions carefully) . Do not open the cooker until it has completely cooled down .
Add a teaspoon and a half of turmeric and a teaspoon of red chilly powder.
Next peal 6-7 garlic pods and thinly slice the garlic and keep aside .
For the tempering :
Next add a tablespoon of oil or ghee in a non stick pan on medium heat and when it gets hot add the thinly sliced garlic and 2 roughly broken Kashmir red chillies and
a whole stalk of curry leaves discarding the stalk and adding the leaves . When they change colour and you get a delicious aroma immediately lower the heat add half a teaspoon of fenugreek seeds and 1.5 tablespoon of dried fenugreek leaves , 1 teaspoon of cumin , fennel and mustard seed, and stir fry for a minute until you hear a popping sound and shut the gas as shown in the images below .
Next add the tempered spices into the cooked daal , give it a good boil and top with fresh cilantro. You can also add thinly sliced ginger to keep you warm and cosy on a cold day , great for digestion especially for people with digestive issues as it helps relieve bloating.
Serve hot along with fresh basmati brown rice and enjoy your spicy , nutritious and delicious daal , bon appetite.
